KERRY Skål President, Sheila Casey, brought her first term at the helm of the organisation to a successful conclusion at the weekend and she is looking forward to another busy year in possession of the chain of office.
She reflected on a very productive year at the annual general meeting in the Killarney Plaza Hotel which culminated with a gala President’s Dinner on Saturday night.
Special guests included Deputy Mayor of Killarney, Cllr John Joe Culloty, Bishop of Kerry, Ray Browne, Skål Ireland President, Margaret Cahill and the organisation’s International Councillor Francis Brennan.
Skål is the only professional organisation promoting global tourism and friendship and the only international group uniting all sectors of the travel and tourism industry. Skål International has 15,000 members in almost 400 clubs in 87 countries.

Host Michael O’Donoghue and his team at the Killarney Plaza Hotel certainly turned on the style for the occasion with a sumptuous feast that more than impressed the guests.
Following an organic Cava reception on arrival, they feasted on an amuse bouche of elderflower smoked Skeaghanore duck with barley, bulgar wheat and lightly pickled cranberry.
That was followed by a choice of starter with rabbit terrine served with pickled cauliflower, carrots, asparagus and sourdough crisps or a Dingle Bay crab tian rolled in seaweed with beetroot, cured salmon and Irish Atlantic sea salt.
The middle course was hot vichyssoise soup with blanched potato and poached Atlantic cod fillet while the main course choice was either Aberdeen Angus beef fillet with grilled foie gras, mushroom, garlic crouton and confit apple jus or poached wild halibut with chanterelles, grilled shallots, octopus and vin juane sauce.
That was followed by an artisan cheese selection with apple chutney, pickled cranberry and walnut biscotti and a sweet of while chocolate truffle, chocolate strawberry and an amaretto chocolate cone.
Dinner wines, compliments of Eno Wines, were a Cuvee Raphael Chateau and a Ribbonwood Marlborough Sauvignon Blanc.
